Does the commandment, "remember the sabbath and keep it holy", apply only the jews as it is in the old testament? What does Jesus say about the sabbath?
Here's a similar argument between the Desciples in Acts 15:5-11. But there rose up certain of the sect of the Pharisees which believed, saying, That it was needful to circumcise them, and to command them to keep the law of Moses.
And the apostles and elders came together for to consider of this matter.

The Law was given to Israel. The law given was to convict us of sin.

Israel "as a nation" regects Christ work on the cross so as of now the have yet to join in that rest.( Yet they honor the Sabbath!)

If one wants to observe the sabbath go ahead, but if you do it to earn salvation you fall in the same unbelief as Israel.
The Galatians was warned of the same thing in Galatians 5:4. "Christ is become of no effect unto you, whosoever of you are justified by the law; ye are fallen from grace."
Salvation is not for sell its a gift. Ephesians 2:8-9. For by grace are ye saved through faith; and that not of yourselves: it is the gift of God: Not of works, lest any man should boast.
Heb 4:3 (KJV) For we which have believed do enter into rest, as he said, As I have sworn in my wrath, if they shall enter into my rest: although the works were finished from the foundation of the world.

Paul and all of the apostles observed God's 10 Commandments per the scriptures.
Paul and the Apostles taught both Jews and Gentiles to follow God's Commandments, including the 4th Commandment, Keep holy the Sabbath Day.

"And the next sabbath day came almost the whole city together to hear the word of God."
Under the "New Covenant" which is the Church of Jesus Christ, consists of Jews and Gentiles, and they are all treated the same! No difference. Remember the Gentiles were a wild olive tree. The believing Gentiles branches from the wild olive tree have been grafted into the original Jewish olive tree. Those that produce good fruit can stay in place and thrive. If a branch does not produce it is broken off and burned.
Jesus Christ asks us to keep the Commandments. John 14:15 "If ye love me, keep my commandments." How can we say we love Jesus, but then we don't try our best to follow the Commandments? The answer" You can't love Jesus and NOT keep "The Commandments"!
As Christian's (Christ Followers) we need to pick up our crosses and follow Jesus, and in doing so, pray that the Holy Spirit will help us along, in the ongoing struggle to follow all of Jesus/God's commands! This then, would be in conformance with the scripture, that show us that Paul, Peter, and all of the Apostles had their own personal struggles to follow and keep God's Commandments.
In summary, Paul does not cancel anything that Jesus taught and instructed in His Gospel.

This scripture is a "perfect example" of being incorrectly understood. Many like you, try to use this scripture to invaladate the argument for keeping the Sabbath today.
In the period that Paul lived almost everyone ate and drank and honored and kept the holidays, and the sabbath days - including the Holy Sabbath Day. Paul was telling them to continue keeping these beliefs intact, and ignore what others are saying, and he tells them to not worry about those that may judge them for keeping these customs in place.

But it is probably good for a person to take / get a day off. Do not slave around and be bound to earthly things. And we have taken Sunday off for many years now. The authorities are behind and take away all Christian holidays these days. The ones we have at least had for 2000 years!
That which you have faith for live in it, see it and be in it. For everything you do that is not of faith is sin. Romans 14:23 And if your profession dictates Sunday work day, what are you going to do then be fired?
Here Paul writes to the Galatians, stern words. But they are for us too. Galatians 3. Then do everything to the glory of God and remember that the law crucified Jesus when He rose again on the third day. Jesus loves u, love you in Christ. It fulfills the whole law, Amen Stay strong in Gods word.

Jesus was a Jew, lived under the Law and required his followers to follow the law.
So, of-course you could find verses to say keep the sabbath or the Law.
As was noted, Jesus fulfilled the law.
You cannot choose to keep the sabbath without keeping the WHOLE Law according to scripture.
Your question should have been: "What does Paul say about keeping the sabbath"
Jesus set Paul to the us (Gentiles) to lay out the doctrines of living in grace.
Paul tells us to not hold one day more important than another.
Paul tells us we are not under the Law.

Paul teaches the opposite of what you said for this age Col 2:16.
Of course Jesus preached the sabbath he was a Jew and kept the Law.
Please read Gal 1-3, Eph 1-3 and Col 1-3 to understand Paul's gospel.
It is not the same as what Jesus taught.
Paul's gospel is called a mystery (secret) and was faith ALONE in the finished work of the cross.
Jesus nor the 12 taught this.
