Hello Insight, God did not tell Adam not to touch the tree. Genesis 2 17 "But of the tree of the knowledge of good and evil, thou shalt not eat of it for in the day that thou eatest thereof thou shalt surely die ". See God had given Adam the charge of tending to everything in the garden, Genesis 2 15 "And the Lord God took the man, and put him into the garden of Eden to dress it and to keep it ". Therefore, he had to touch the tree in order to take care of it like the rest of the garden. God told him not to eat of that tree. When God confronted Adam and Eve, he reminded them what he had said Genesis 3 11 "And he said, Who told thee that thou wast naked? hast thou eaten of the tree, whereof I commanded thee that thou shouldest not eat? " If I can say it like this, Eve added to what God stated and this is how the serpent was able to get a foot in the door, because once she touched it and did not die she continued down that path to eat that fruit that was on that tree.
