Adam, none of the New Testament had been written when this creed was first spoken, just a short time after The Resurrection. The only "Scriptures" they had would have would have been the writings that we know as The Old Testament.
This is only a few of the instances. Is someone doubting that Jesus was risen on the third day or something? The Bible says it all over the place, so if someone is trying to claim otherwise, they have a whole mountain of scripture against them.
And Jesus said, "For as Jonas was three days and three nights in the whale's belly; so shall the Son of man be three days and three nights in the heart of the earth." Mat 12:40
It always warms my heart when people search The Holy Scriptures and know The Holy Scriptures that are to make you wise unto salvation. A true Bearan: Acts 17-10-11.
Those are three good examples!
I like that you see that Abraham reckoned that Isaac was dead on the first day and he received him back on the third day. Heb 11:17-19. His faith is exemplified when he told his servants that "I and the lad will go yonder and worship, and come again to you." Gen 22:5.

As your post interested me to look into this. There seems to be no exact Scripture, in the OT, of the Messiah rising on the third day. What I found was there being three parallels in the OT Jesus may have been referring to.
The First being a parallel to Abraham being commanded to sacrifice his "only" son Isaac. When hearing this his son became dead to him. Then on the third day when he was about to offer him in sacrifice the angel of the Lord stopped him. Then Isaac being alive to him again. Genesis 22:1-12
Then next being a parallel to Jonah being three days, and nights, in the whales belly. Jonah 1:17. Showing that he was not living, but had died, is Jonah crying "out of the belly of hell or "sheol"I cried". Then Jonah 2:20 where the fish spit him up and being revived, or alive, after three days.
The last is a parallel to Israel being raised on the third day. Hosea 6:1-2.
As you may know all of these things already as you are a very wise man in Scripture. I just thought to look into and post what I found to you.
PAUL SAID . I knew a man , either in the body or out of the body such an one was caught up unto Third Heaven, it stands to reason if there is a third Heaven... there must be a first and a second..... i believe that the relationship between the tabernacle in the wilderness and the three heavens are directly related with each other

There are lots of Old Testament Scriptures that refer to a suffering and dying Messiah but I've often wondered where is it recorded "that he rose again the third day ACCORDING TO THE SCRIPTURES"
This creed probably started being used by Christians within months of Jesus' resurrection. There were no New Testament writings at that time. "The Scriptures" referred to the Jewish writings, The Law and The Prophets.
I'll share some of my ideas as I hear about yours.
The "heavens" & the "firmament" in Psalm 19:1 speaks about the universe & sky. The Psalmist declares that both the sky & universe with all that we can see in them are indeed a mighty spectacle & declaration of God's Handiwork & Glorious Power.
In connection with this Psalm, Abraham Lincoln once said, "I can see how it might be possible for a man to look down upon the earth and be an atheist, but I cannot conceive how a man could look up into the heavens and say there is no God." And of course, he was speaking of the starry universe working together in perfect unison.
19:13 Presumptuous - From known and evident sins, such as are committed against knowledge, against the checks of conscience, and the motions of God's spirit. Dominion - If I be at any time tempted to such sins, Lord let them not prevail over me, and if I do fall into them, let me speedily rise again.
The heavens and earth are glorious and speak of God's majesty, but he shows us a greater glory in his word.What man may never discover in outer space or here on earth,is of little loss.What man may miss as God reveals himself through his word is tragic,with eternal consequences for many.As there is nothing hid from the heat of the sun,there is nothing hidden about the love of his son.What man needs to know,God freely shows.Heaven and Earth will pass away,but God's word will last forever. Richer than gold and sweeter than honey, here in your hands, before your eyes, for you, from him.
We need to be objective to our own selves what we say and do that it's pleasing to the Lord .. but then their are hidden sins which we may not be aware of . That's why we pray ; Lord forgive us our sins the ones we know & the ones we don't know
Verse 8-We must learn and love God's view of right and wrong. This will help us to be convinced as the psalmist was that living in harmony with God's standards is the best way of life.
This is for everyone: we're not under the Law.
However in Matthew chapter 5, Jesus reviewed some laws and stated some that are still in force. It's all in red ink, Folks. It's not meant to constrain, but to protect.
What Jesus gave us was 2 new commandments.

Here's some examples: presume the mercy of God; sin against hope; carelessness with God and His Word; willful sin; deliberate sin; carelessness leads to callousness. And much more!! That's a SELAH: pause and think on these things
Only the one true God is righteous and only through Him can we see, be saved and purified, gain wisdom and joy, and live forever. He, because of His great, enduring love and mercy, has provided a way to eternal, abundant beautiful LIFE. ALL of nature, HIS creation, proclaims HIS glory. This Psalm ends with a prayer from my own heart, to think and speak only that which pleases my Redeemer.
Psalm 19 is sweet.
The glory of God in the heaven.
The soul of man on earth.
Every word of God is pure... Proverbs 30:5
Thy word is very pure: psalm 119:140
